Master butcher and meat sommelier Dirk Ludwig cuts the back of a Simmental heifer on stage. He explains all the cuts and provides comprehensive background knowledge on the subject of meat quality, maturation and selection. Together with Don Caruso BBQ, he prepares the freshly cut steaks on the grill for tasting.
